- Preheat the oven to 180°C fan bake mode. Make 6 even slices into each potato, about two-thirds of the way through, taking care not to slice all the way through to preserve the potato intact.
- Brush with oil and place on a baking sheet lined with parchment paper. Bake for 50-60 minutes, or until a knife inserted into the center comes out clean.
- Allow to cool for a few minutes before gently pulling the potato slices open to make place for the contents. Cut the cheese slices into pieces around the size of the potato slices.
- Fill the remaining slices with ham and a bit of cheese every other slice. Season with salt and pepper to taste.
- Return to the oven for 8-10 minutes, or until the cheese is melted, and serve immediately.
