- 1 tbsp.
vegetable oil
- 2 tbsp. grated
fresh ginger
- 2 tbsp red curry
paste
- 1 lemon grass
stem, minced
- 4 cup chicken
stock
- 3 tbsp of fish
sauce
- 1 tablespoon
brown sugar, light
- 3 cans (13.5
oz.) of coconut milk
- ½ pound fresh
shiitake mushrooms, sliced
- 1 pound medium
peeled and deveined shrimp
- 2 tbsp freshly
squeezed lime juice
- season with salt
to taste
- ¼ cup chopped
fresh cilantro

Preparation Method of Thai coconut soup
STEP-1
- In a big pot,
heat the oil over medium heat. Cook and stir in the heated oil for 1 minute
after adding the ginger, curry paste, and lemongrass.
STEP-2- Stir in the
chicken broth gradually, followed by the fish sauce and brown sugar; reduce
heat to low and simmer for 15 minutes.
STEP-3- Cook, stirring
constantly, until the mushrooms are tender, about 5 minutes
STEP-4- Cook until the
shrimp are no longer translucent, about 5 minutes. Season with salt and
sprinkle with cilantro after stirring in the lime juice.
