Ingredients required-Thai Coconut Soup 

  • 1 tbsp. vegetable oil
  • 2 tbsp. grated fresh ginger
  • 2 tbsp red curry paste
  • 1 lemon grass stem, minced
  • 4 cup chicken stock
  • 3 tbsp of fish sauce
  • 1 tablespoon brown sugar, light
  • 3 cans (13.5 oz.) of coconut milk
  • ½ pound fresh shiitake mushrooms, sliced
  • 1 pound medium peeled and deveined shrimp
  • 2 tbsp freshly squeezed lime juice
  • season with salt to taste
  • ¼ cup chopped fresh cilantro

Preparation Method of Thai coconut soup

STEP-1

  • In a big pot, heat the oil over medium heat. Cook and stir in the heated oil for 1 minute after adding the ginger, curry paste, and lemongrass.
STEP-2
  • Stir in the chicken broth gradually, followed by the fish sauce and brown sugar; reduce heat to low and simmer for 15 minutes.
STEP-3
  • Cook, stirring constantly, until the mushrooms are tender, about 5 minutes
STEP-4
  • Cook until the shrimp are no longer translucent, about 5 minutes. Season with salt and sprinkle with cilantro after stirring in the lime juice.
